SMOKED BEANS WITH CORN & CHIPOTLE

Smoke takes this dish over the top while fresh lime & cilantro brighten it

Serves 8-10

 

6c black beans, rinsed

1c chicken stock

3 canned chipotle in adobo, chopped, plus 3tbsp sauce

3tbsp brown sugar

2 ears corn, kernels only

1 small yellow onion, chopped

Lime & chopped cilantro, to serve

 

Preheat a smoker to 250 degrees. Apple or cherry wood is recommended to use. Combine all ingredients in a large bowl with salt n pep then transfer to a 10-inch cast-iron skillet. Smoke for 4 hours. Let cool and serve with cilantro and lime.
