ROASTED RADISH SALAD WITH CREAMY HEMP DRESSING

Spicy arugula complimented by crisp roasted radishes in an earthy, lemony hemp dressing

Serves 2 lunches or 4 sides

 

For the Salad:

2 bunches radishes, trimmed, cleaned & halved

Olive oil

3c arugula

2tbsp roasted salted pepitas

 

For the Hemp Dressing:

1/4c hulled hemp seeds

1tbsp lemon juice

1tbsp water

1tsp dijon mustard

1 clove garlic, minced

Preheat oven to 400 degrees. Line a small baking sheet with tin foil and toss the radishes on it with a drizzle of olive oil. Season with salt n pep. Roast 10min then flip and roast 5min, Cool completely or else it will wilt the arugula.

Puree dressing ingredients with a hand processor until smooth. Add more water until the consistency of a thicker vinaigrette. Add into a large bowl and toss in the arugula and roasted radishes. Plate and top with pepitas. Best served same-day.
