PICNIC PINWHEELS

Herbed cream cheese, turkey, onion & artichoke rolled up in a homemade tortilla, perfect for a snack or picnic

Makes Roughly 1 Dozen

 

For the Herbed Cream Cheese:

4oz cream cheese, softened

1/2tsp garlic powder

1/4tsp red pepper flakes

2tsp oregano, minced

1tsp chives, minced

1tsp thyme, minced

1tbsp parsley, minced

2tsp dill, minced

 

2 large tortillas (recipe for my Bacon Fat Tortillas below!)

1/2c marinated artichoke hearts, chopped

¼ red onion, peeled & thinly sliced

1/2lb sliced deli-style turkey breast

 

Combine together the herbed cream cheese ingredients in a small bowl. Warm the tortillas. Smear one tortilla with half of the cream cheese, sprinkle with half of the remaining ingredients. Roll up tightly into a log and roll in plastic wrap. Repeat with the other half of ingredients. Refrigerate 30min.

 

When ready to serve, trim the ends of the logs and use a sharp knife to cut roughly 6 slices out of each log.
