EASY SHEET PAN PEPPER JELLY SALMON
A weekday meal with of salmon smothered in sweet-n-spicy pepper jelly & broccoli with lemon
1/2lb salmon, portioned into 2
2tbsp pepper jelly
1 head broccoli, cut into florets
1 lemon, sliced into wheels
Olive oil, for drizzling
Preheat over to 425 degrees. Line a large baking sheet with foil, then place a rack on top and oil it to keep the food from sticking. Lay the salmon pieces on one half of the rack, skin-side down, and season with salt n pep. Spoon the pepper jelly on top of the salmon evenly.
In a large bowl, toss the broccoli with some olive oil, salt n pep. Lay broccoli on the other side of the rack next to the fish and lay the lemon slices on top.
Roast 20-25min or until salmon is cooked through. Serve immediately.
