Crunchy homemade peanut butter granola, layers of sweetened yogurt & sugar-crusted-n-bruleed banana

Serves 4


For the PB Granola:

2c rolled oats

1c walnuts, coarsely chopped

1/2c oat flour

2tbsp almond flour

1tsp salt

1/2c peanut butter (smooth or chunky, up to you!)

1/4c coconut oil

1/4c honey


4 regular bananas, cut in half, or 8 baby bananas

Turbinado sugar

4c plain greek yogurt, or coconut yogurt for DF

1/4c honey


Preheat oven 325degrees. Line a large baking sheet with foil & grease. In a large bowl, combine the first 5 ingredients for the granola. In a small bowl, combine the last 3 ingredients and microwave until warm, 30-60sec. Stir together then fold into the dry ingredients until completely combined. Spread granola on the prepared sheet and bake 30min, tossing every so often until dry and golden brown. Let cool.


Cut the bananas in half horizontally. Sprinkle generously with turbinado sugar and use a kitchen torch to brulee until sugar is melted and golden brown. Let cool so the crust forms. Swirl the honey into the yogurt.


To serve, layer a stemless wineglass, bowl, or mason jar with yogurt, then granola, then 1 banana half. Repeat. Serve immediately.



Freeze in a sealed container for up to 6months.
