Melty marshmallows stirred into oats with strawberries roasted with bitters & topped with fresh lemon zest

Serves 2

1c rolled oats

2c water

dash salt

12 jumbo marshmallows, quartered, or 1-1/2c mini marshmallows

8-10 strawberries, hulled & quartered

1tsp bitters, plus a few dashes

zest of 1 lemon


Preheat oven to 450 degrees and line a small baking sheet with parchment paper. Toss the strawberries in the bitters just right on the pan and roast 5min, till just softened. Add a couple dashes of bitters once you take them out of the oven.


Meanwhile, combine the oats thru salt in a medium pot & bring to a boil. Lower heat and simmer, uncovered, for about 5min, until soft. Immediately add marshmallows & stir until starting to melt but not not completely melted.


Spoon oatmeal into bowl, top with strawberries and lemon zest.
