Schmeared with herbed cream cheese & topped with a gooey egg

Makes 4


4 slices toast (I used my Spinach Swirl Sandwich Bread, recipe link below!)

4oz cream cheese, softened

Zest of 1 lemon

1tsp lemon juice

1tbsp fresh dill, minced

Dash red pepper flakes

1 heirloom tomato, cut into 4 thick slices

4 egg, cooked sunny-side up

Parsley, chopped, to top


In a small bowl, mix together the cream cheese thru red pepper flakes, along with some salt n pep. Schmear atop the toasts. Top with a slice of tomato, a cooked egg and some parsley.
