A sweet, energizing boost to the day

Makes roughly 18 gummies

1 packet plain gelatin

2-1/2tbsp water

1-1/4c water

2 green tea bags

3tbsp honey

1tbsp lemon

Grease a 9x5" loaf pan with coconut oil and set aside. Measure 2/1/2tbsp water into a small bowl and sprinkle gelatin over the top. Let set 10min.

Meanwhile, in a small pot, bring 1-1/4c water to boil with the 2 tea bags. Remove from heat, take out the tea bags and stir in the gelatin, honey and lemon juice. Whisk steadily for 1min. Pour into prepared pan and refrigerate at least 1hour. Turn upside down onto cutting board and use a very sharp knife to cut into 3 rows of 6. Refrigerate for up to 1 week.
