GINGER SNACKING GRANOLA

GF, DF

Crunchy, chewy & spicy with chunks of candied ginger & a hint of lime

4 cups

 

2-1/2c rolled oats

1/4tsp baking soda

1/4tsp salt

Zest of 1 lime

1/4c candied ginger, minced

1/4c coconut oil, melted

1/4c agave

1/4c coconut Sugar

1tsp vanilla

 

Preheat oven to 350 degrees. Pour a half a cup of oats into a food processor and process until a flour-like consistency. In a medium bowl mix oats through ginger. In a separate bowl combine coconut oil through vanilla. Combine the wet into the dry. Line an 8x8" square pan with parchment and press in the mixture evenly. Bake for 20 minutes and cool the entire pan on a wire rack for 10 minutes. Increase oven heat to 450 degrees and break up the granola into large chunks. Toast for 5 minutes. Eat as a snack or with almond milk as breakfast.

Freezability:
Freeze in a ziplock or sealable Tupperware for up to two weeks.
