CHUNKY GINGER-LIME GRANOLA

A lil chewy a lil crunchy and a lot of zest & aromatics

Serves 2

2-1/2c rolled oats

1/4tsp baking soda

1/4tsp salt

Zest of 1 lime

1/4c candied ginger, minced

1/4c coconut oil, melted

1/4c agave

1/4c coconut Sugar

1tsp vanilla

almond milk, to serve

 

Preheat oven to 350 degrees. Pour half a cup of oats into a food processor and process until a flour-like consistency. In a medium bowl, mix oats through ginger. In a separate bowl, combine coconut oil through vanilla. Combine the wet into the dry. Line 8x8 inch square pan with parchment and press in the mixture evenly. Bake for 20 minutes and cool the entire pan on a wire rack for 10 minutes. Break up the granola into large chunks and eat with almond milk.

Freezability:

Store in a ziplock or sealed Tupperware for up to two week.
