FRUIT N CHEESE PLATE
Ricotta whipped with honey & vanilla, Cointreau-brushed grilled nectarines, with gooey chunks of salted honeycomb, sweetened almonds & mints
1c ricotta cheese
1tsp vanilla extract
2 peaches/nectarines, halved & depitted
1/4c honey-roasted nuts (any kinda nut)
Honeycomb, chunked, to serve
Mint, shredded, to serve
In a small bowl, combine ricotta thru salt and whip (either by hand or with a hand mixer) together until light and smooth. Brush the peaches with Cointreau and grill or pan-sear until lightly softened and charred. Slice into wedges.
To serve, schmear the cheese onto two plates, scatter with peaches, nuts, honeycomb and mint.
