Dried tomatoes with garlic and thyme that pack a bang of flavor

Makes 2 cups

12 Roma tomatoes (depending on your dehydrator size, mine fits roughly 3 tomatoes per tray)

garlic powder or about 4tbsp minced fresh

dried thyme or basil or oregano

olive oil

Thinly sliced tomatoes, about 1/4 inch thickness if possible. Lay in a single layer on each tray of your dehydrator. Drizzle all the tomatoes with olive oil, sprinkle with salt and pepper, then sprinkle with garlic powder and dried herb.

Dehydrate four to six hours, depending thickness. Store in a sealed Tupperware in the fridge for up to a week.
