ESPRESSO-HAZELNUT ENERGY BARS
Chewy soft date bars packed with nuts and earthy espresso
Makes 8 bars
6oz medjool or deglet dates, depitted
1-1/2tbsp instant espresso powder
3/4c golden raisins
1tbsp coconut oil
Line a tin loaf pan with parchment paper. Combine the first 4 ingredients in a food processor and pulse until chopped up. Add remaining ingredients and puree until the consistency of crumbs. Pour into lined loaf pan and press very firmly with wet hands. Refrigerate for 2 hours to set and cut into bars.
