COFFEE OATMEAL SLICE

Quick energizing oatmeal, great cold after a workout

Serves 4

1c leftover cooked rolled oats

1c uncooked rolled oats

1/4c coconut sugar

1-1/2tsp vanilla extract

1/2c mixed nuts, roughly chopped

1/2c brewed & cooled coffee

honey, to serve

Preheat oven to 350 degrees. Mix together all ingredients in a large bowl. Line 8x8" baking dish with parchment paper and spoon in the oat mix, smoothing the top. Bake 20-25min until firm. Serve warm or cold with a drizzle of honey.
