CARDAMON OATMEAL WITH CANDIED CITRUS
Steel-cut oats laced with cardamon, topped with citrus peel candy, toasted nuts & dairy-free lemony yogurt
1c steel cut oats
1/2tsp ground cardamom
1/2tsp vanilla extract
1/4c plain yogurt
2tbsp lemon juice
2tbsp maple syrup
1/4c candied citrus peels, chopped
2tbsp nut of choice (I happened to have toasted pine nuts on hand)
Bring water to boil in a small pot then add in the oats & salt. Bring back up to a boil then reduce heat to a simmer and cook, uncovered, for 20 minutes or until desired consistency. Remove from heat & stir in the cardamom & vanilla.
While the oats cook, whip together the yogurt, lemon juice & maple syrup. To serve, divide the oats between two bowls, top with the candied peel, nuts & a dollop of flavored yogurt.
